PERSIMMONS HANG IN THE SUN TO DRY IN KYOTO
 
Fall is a celebration of persimmon season. 
One of the few native fruits of Japan, the vibrant and striking fruit is peeled and suspended dry to make HOSHIGAKI (dried persimmon), each fruit is carefully massaged by hand every few days to bring out the sugars. 
Until the 17th century, dried persimmons were the main form of sweetner in Japan. Now, the tradition continues as an artisanal food craft, the glowing orange spheres appear like art installations.
